Recipe: Vegan Chick'un Wrap :)

My friend Laura told me about this delicious & quick wrap to make & I thought I'd share with you guys! :)

This is all I used!:
Laura told me onions and peppers would be good in it too but I didn't think my stomach felt up to any "zing" today. But if you want to try this, let me know how it tastes with those additions!

Recipe:
  • Joseph's Lavash Bread (It's SO good, only 50 calories for HALF that sheet and the package is right, super soft)
  • Joseph's Garlic & Chives Hummus
  • Gardein Crispy Tenders 
  • Romain Lettuce
So here's what I did:

First I cooked the Chick'un.....


For these 3 small pieces, it was 20 minutes.....

at 430 Degrees.....

When it was already 92 degrees & probably hotter in this townhouse.

Anyways, I was a hot mess (I have a picture of that too, but I'll spare you the nausea.)


When the chik'un was done I sliced it up

& then I spread the hummus, lettuce and chick'un onto the wrap.....
& It was deeeeeelicious! :)

To top it off (and beat the heat!):

Om nom nom. 
Oh & when I was taking my cookie sheet down, I also knocked a glass bottle of hot sauce down...

& Now the kitchen has a lovely aroma and I had to clean it all up. Including all the glass shards. :( Not fun.

I think I talked more about the heat than the food. Oh well. :)

On Today's Menu...

Vegetarian Burritos!!

I love mexican food. Which is funny because I don't like spicy, I just love beans, salsa, guacamole, etc. So this is pretty much a staple lunch that I have, that I thought I'd share with you. (It's super easy!)


So my lunch today (which I am eating as I type this post and it's soooo good) is two mini flour tortillas topped with romaine lettuce, refried beans, baked beans, pinto beans, salsa, and guacamole. Om nom nom. It's SO easy to make because you just heat them all up in pots and scoop and serve. I heat up my whole stock then put them in tupperware to save for later so it's all just microwaved. This lunch took like 6 minutes to make.


Mmmmmm. Here's a close up. :) I also have low-sodium tortilla chips and garlic & toasted chive hummus on the side. It's definitely a vegetarian lunch, not sure if its vegan (seeing that I don't 100% know the ingredients of the tortilla and hummus). But either way, this lunch is easy, delicious, and good for you!

Peppermint Bark

I know it's a little late to do a Christmas-related post, but I wanted to share this recipe with you!


I made....


Peppermint Bark!


Review? 
It was so yummy! It's also incredibly easy to make. Just 3 ingredients! (White chocolate, candy canes, and peppermint extract). I like it extra peppermint-y so I added a little extra extract and it was delicious! The recipe (which can be found here) yielded a lot of bark so I was able to give these jars as gifts to some people while still having some left overs for myself!



Alterations?
Next holiday season when I make this, I'm going to try using a different brand of candy canes. These tended to stick to your teeth when you bit into the pieces. I used Bob's but I'll experiment next December.

I will definitely make this again, it was so yummy & so easy!

Jars, Mugs, & Cupcakes, Oh my! :)

Hello!
I have pictures of my other awesome finds now:
A Brand new mason jar! Which I'm using for buttons!


My BEAUTIFUL Mushroom Soup Mug!! Love at first sight!

I love this vegetable soup mug.

Today I also made...
Orang Soda Cupcakes!!


I used this recipe to make these delicious treats!
Although, I clearly tweaked it a bit (they were supposed to be in ice cream cones)


Heres a "fresh out-of-the-oven" photo :)



The kitchen smelled absolutely heavenly.



All packaged up & ready to go to the animal shelter to feed all my working buddies!



Overall:
Delicious!! Not an extremely strong orange flavor. Just right! Very easy to make. Literally put everything in a bowl & mix then pour. The only negative is that the recipe called for 'orange hard candies' which, (in stop & shop) were very scarce. So I bought 3 bags of Life Savers & picked out the orange ones. (I was, however, disappointed to find only one in one of the bags) But I managed & will probably make these again after I test out some other recipes!
All my family had to say was "Mmmmmmm" :)

& I'm typing this post from my MAC!! :) I'm still busy transferring all 6,000 songs over but I will definitely post pictures of it tomorrow!
