On Today's Menu...

Vegetarian Burritos!!

I love mexican food. Which is funny because I don't like spicy, I just love beans, salsa, guacamole, etc. So this is pretty much a staple lunch that I have, that I thought I'd share with you. (It's super easy!)


So my lunch today (which I am eating as I type this post and it's soooo good) is two mini flour tortillas topped with romaine lettuce, refried beans, baked beans, pinto beans, salsa, and guacamole. Om nom nom. It's SO easy to make because you just heat them all up in pots and scoop and serve. I heat up my whole stock then put them in tupperware to save for later so it's all just microwaved. This lunch took like 6 minutes to make.


Mmmmmm. Here's a close up. :) I also have low-sodium tortilla chips and garlic & toasted chive hummus on the side. It's definitely a vegetarian lunch, not sure if its vegan (seeing that I don't 100% know the ingredients of the tortilla and hummus). But either way, this lunch is easy, delicious, and good for you!

  1. I've never seen hummus not be vegan! and most nacho style chips are ... just not certain ones with flavoring like those chips with lime. Pre-made guacamole isn't always vegan though but I make mine fresh with avocado :) either way awesome tasty lunch and easy to make vegan if it's not already!

  2. i dont know if i could be vegan just yet seeing that i love ice cream and i have to eat on campus. but i'm going to try to at least be vegetarian this school year. it's a step in the right direction! :D

  3. Oh yum! I love mexican food too as long as its not too spicy. I think it probably would be vegan, most hummas and wraps ive come across are vegan :)
